Mom Friendly Recipes

As a busy mom, who is flying solo and by the seat of her pants most of the time while juggling school, a variety of other programs all while my husband works out of state, I have learned to appreciate a great recipe that is easy, and kid friendly! Macaroni Hotdish
Ingredients:
1 lb Ground Beef
1 Jar Chunky Garden Blend style Spaghetti Sauce
2 Boxes Macaroni and Cheese
1 Stick of Butter
1/2 Cup Milk
Optional:Onions, Carrots, Peppers

Directions:
Preheat Oven to 325.
Brown the hamburger. *Optional:saute onions, chopped carrots, peppers; In lieu of this I choose to use a garden blend sauce, but adding fresh veggies is good!
Add the jar of spaghetti sauce and warm.
Make 2 boxes of Macaroni and Cheese according to box directions.
When the Macaroni is done, mix it and the meat sauce together. Pour into a baking dish. Bake uncovered for about 20 min at 325. Kids LOVE it!!!!


Easy Crockpot Lasagne
Ingredients:
1 large (16 oz) Bag of Shredded Mozzarrella Cheese
1 Large Jar of Spaghetti Sauce
1 - 1 1/2 Lb of Hamburger
I Jar of Cheesy Alfredo Sauce
1 Large Box of "No Boil" Lasagne Noodles

Directions:
Brown Hamburger. Add spaghetti sauce and heat mixture until warm. In a large crock pot, cover bottem with a layer of the spaghetti sauce so the first layer doesn't stick. Add a layer of Lasagne Noodles. Cover with a layer of the spaghetti sauce and top that with a layer of the alfredo sauce. Top the layer with Mozzarrella Cheese. Continue layering in this order until you get to the top of the crockpot (noodles-spaghetti sauce-alfredo sauce-cheese). Top it off with the remainder of the cheese. Cook on high for about 3 1/2 hours. Let cool about 15 minutes, or until easy to serve. Serve with basic garlic bread or whatever your family likes. Enjoy!

Easy Chow-Mein Noodle Hotdish
Ingredients:
1 lb hamburger
1 can Vegetable Beef Soup
1 can Chicken and Rice soup
1 can Cream of Mushroom Soup
1 1/2 soup cans of water
Chowmein noodles
Soy Sauce (optional)

Directions: Preheat oven to 350. Brown hamburger and place in a roaster/oven safe pan. Add the cans of soup and approximately 1 1/2 cans of water (Be careful not to add too much water) to the ground beef. Mix together. Add a little soy sauce if desired. Top with Chow Mein Noodles. Bake covered for about 50 minutes. Remove lid and bake an additional ten minutes. Allow about 10 minutes to cool/settle before serving. Enjoy!


Sauerkraut Hotdish
A Note on this one.. I come from a big family of sauerkraut eaters and makers. Infact, my grandfather was featured on Jason Davis's "On the Road" Segment on Channel 5 for his Sauerkraut canning he does each year. This recipe is fabulous! Even the kids that you think will hate the sauerkraut, will love it! Barely notice it! This is a family favorite!

Ingredients:
1 Quart of Sauerkraut
1 lb Ground Beef
1 Bag Wide Egg Noodles

Directions: Preheat oven to 350. Cook ground beef. Cook Sauerkraut for a few minutes in a small amount of water. Cook Noodles according to directions on bag, draining the water in to a bowl and setting it aside for later use. In a pan, combine ground beef, noodles, sauerkraut and about 2 cups of water you saved from the noodles (be careful not to add too much). Cook covered for one hour. Check at about 45 minutes to see if additional water is required if it is looking dry. If so, add more of the water you saved from the noodles. Cook an additional 15 minutes for a total of about 1 hour. Great with Crescent Rolls or Grand Biscuits!


Tator Tot Hotdish
Ingredients:
1 Lb ground beef
1 Can of Kitchen Cut Green Beens
1 Can Cream of Celery Soup
1 Can Creamy Onion Soup
1 Bag of Tator Tots

Directions: Preheat oven to 325. Cook ground beef and drain. Put in bottem of baking dish. Drain green beans (do not cook). Spread over the ground beef. Cover with uncooked creamy celery soup. Cover that with the uncooked Creamy Onion Soup. Cover with tator tots. Cook uncovered until tator tots are golden brown (about 1 hour).
